To insure the authenticity of the dining experience, Chef has imported an authentic hood wood-burning oven for the kitchen. It has been made the focal point of the kitchen. Chef Dino Carta bakes traditional Sardinian bread daily, as well as truly braising aged meats, and even fish.
The menu is focused on farm fresh and locally grown food. Char-grilled meats and local fish will be cooked in the oven as it is in Sardinia.
Sardinia Restaurant only use the freshest of seasonal ingredients; in creating their traditional Italian fare, including locally caught seafood, house-made pastas, organic produce, and wild mushrooms.
Taste the Sardinia bread, know as Pane Carasau, baked fresh daily which welcomes you at your table. The pasta dough is also made fresh daily. Revel in the authentic Sardinian paella made with fregola and enjoy the unique flavor of bottarga.
About Chef Dino Carta:
Dino Carta began his love affair with food and its preparation in the Sardinian kitchen of his mother and father. To this day food is a passion and evokes happy memories of family. He attended culinary school in Sassari, Sardinia. His apprenticeship took him to Tuscany in northern Italy and work in the kitchen at the famous Emerald Coast. He still adheres to the Italian philosophy of cooking where regional food is of great import. Simple, healthy, fresh and pure of taste are how he likes to prepare food.
Dino has always been driven to grow as a chef. He moved to Paris where he was the Commis at Il Cortile for one year. It was then his great fortune to work as Commis for Alberigo Penati at the world famous Harri’s Bar, in London. Dino considers Alberigo Penati “his chef.” It was this experience that cemented his respect for people and food.

“Fantastic food and impeccable service. We had a part of four with reservations for a Thursday evening at 6:30 pm. When we arrived 3 tables were occupied but shorty the restaurant was full. Two of us had linguine with clams and the waiter explained the bottargo to us. One was served with it on the side which I would recommend to anyone trying this for the first time. Veal ravioli was excellent as were the fish entrees. The serves a very nice selection of wines and the desserts we delicious. Try the Caramel Pannacotta or the Ricota Tart-delicious. Nenad was our server who did a wonderful job and was a great host for the evening…at the end of the evening he stationed himself at the door to greet us goodby! “Fantastic Italian restaurant, located in a small strip mall located right on 41. We made a reservation , was a little late at night , when you walk in restaurant , you walk into s small bar area with about 4 high tops , cute area, and on the side is entry to the main restaurant. We started with some nice wine , and was served there absolutely delicious bread , not sure what it was called specifically, but delicious ! I started with a nice house salad very fresh , good size ! My husband ordered one of the specials of the night it was a fresh cod , we are from New England , where cod is plentiful, but this was one of the best , largest pieces of cod we have had , delicious , I ordered another special of the night , there form of gnocchi, all pasta fresh , served with fava beans , and fresh fish , I had changed up the order a bit but was still fresh a delicious !
